Pawpa's Chipotle & OMGarlic Soyrizo Bisuits and Gravy

Serves: 4 (2 biscuits each)

Prep: 30 minutes

Cook: 20 minutes

 

Biscuits:

2 c. flour

3 t. baking powder

1 T. sugar

1 t. salt

1/4 t. pepper (optional)

3 T. cold butter, cubed

1 T. shortening

3/4 c. milk

 

Soyrizo Gravy:

1 lb. soyrizo

1/4 c. flour

3 c. milk

1 T. Pawpa Flavor Chipotle seasoning

1 T. Pawpa Flavor OMGarlic seasoning

 

Preheat oven to 400 degree F. In a bowl, whisk flour, baking powder, sugar, salt and, if desired, pepper. Cut in the butter and shortening until the mixture resembles coarse crumbs. Add milk; stir just until moistened. Turn onto a lightly floured surface, knead 10 times.

Pat or roll to a 1-inch thickness; cut with a floured 2-inch biscuit cutter. Place 1 inch apart on an ungreased baking sheet. Bake until golden brown, about 15-17 minutes.

Meanwhile, in a large skillet, cook the soyrizo over medium heat until slightly browned, about 5-7 minutes, breaking into crumbles. Stir in flour until blended; gradually stir in milk. Bring to a boil, stirring constantly; cook and stir until the gravy is thickened, about 4-6 minutes. Stir in seasonings and serve with biscuits.
